How to read the sensor analysis graph

The graph we make for the Selezione Leone Evoo is simple:

  • fruity-bitter and spicy are the medians of the INTENSITY expressed by at least 8 tasters on a scale from 1 to 10
  • harmony is intuitive, it expresses how “harmonious” the sensations between the nose and mouth are. If the oil is very bitter and not very fragrant, for example, it will have a lower harmony than one with very similar intensities (the harmony is analyzed between fruity, bitter and spicy)
  • the organoleptic attributes linked to names of fruit / vegetables / aromatic herbs are calculated in proportion to the intensity of the fruity perceived by each taster. Clearly, here we are not talking about “flavored oil” but about smells that at least 50% of the Panel’s members have perceived and that are codified with common terms that “evoke”them. These perfumes are absolutely part of the quality of the high-quality Evo oil, they are originated in the mill during delicate biochemical processes and distinguish the different varieties. Don’t feel bad if you don’t perceive them, maybe try to “feel” those with the highest intensity, we perceive them because we have been tasting for years (and without bruschetta ;-).
